I only have one tip from a fellow recipe virgin.

Given the choice between medium sized pan and my rarely used 'big' pan, I under panned.

Everything was fine in the everyday pan, but I would have preferred the extra 'elbow room' that I'd have got from big pan.


Oh and don't piss around with the oats!

I hear you, but the recipe is for a thick flapjack (around 2-2.5cm thick) in a 20cm pie dish. Unconventional...but it just works!

If the honey sticks to the edge of the pan, use a butter knife to score around it whilst it cools.

No no the saucepan I melted and mixed everything in before turning it out into the deep rimmed cake tin.
That got a bit cramped when the oats arrived.

Ok. They are in the oven. Have made 2 batches as one needs to be gluten free oats as one of my daughter's is coeliac. Updates later as now how to clean kitchen (which i have destroyed) as we have guests arriving at midday.

There were home made flapjacks at our local school summer fate. They were so good I asked the chef for the recipe, which she kindly showed me online. Now I can't find it :angry: :facepalm:

i have just shoved so much flapjack down my fat greedy face...

It's a winner, but i think my 'flapjack instincts' helped when i whacked up the over temp for an extra few minutes of cooking time after the 17 minutes, to give that little extra burn on the edges. Still lovely and chewy in the middle. Perfect.

As the winner of the albourne village show ‘best flapjack’ for 3 years running, I feel that for once I have more than opinion to offer.

Golden syrup is just plain wrong...
Additives such as fruit or...god forbid...cornflakes are just plain wrong.

The correct recipe is...

Infinity foods jumbo oats
Butter
Demarera sugar
HONEY (preferably Payne’s)

The ratios are 2, 1, 1, 1

I go for

400g oats
200g butter, honey, sugar

Melt the butter, honey and sugar over a low heat, don’t boil, keep going until there are no sugar granules on your stirring spoon.

Add the oats and coat GENTLY

turn out into a circular 20cm tin (yes circular) with a disc of grease proof paper at the bottom

Pat down gently...don’t pulverise!

Cook in the oven (170 degrees fan / 180 degrees normal) for 17 mins

Leave to cool for at least 3 hours

Remove from tin and slice into 12 pizza style slices

Enter into village show

Win award!!

You’ll thank me [emoji4]
In 3 hours time it will be flapjack o'clock.

Probably the best flapjack I’ve had was last summer when one of my children was playing cricket at school & we had a cream tea in the cricket pavilion. The flapjacks were home made apparently by one of the chefs at the school and they were gorgeous. Slightly brown on the outside , chewy but not stodgy and a slight golden syrup flavour .

Not sure if it has already been mentioned, but use the cheapest oats you can get. All the powdery crumbly mess makes for a much chewier experience.

The recipe is the mutt's, yesterday's flapjack was glorious.

I learned from the first time, much bigger saucepan.
Patience making sure the 'liquid' was all melted.
Taking a note from another flapjacker I gave it a short intense blast of heat at the after 17 minutes.
Then watched The Great Escape all 2hrs 54mins of it, keeping me out of the kitchen.


Perfect flapjacking.
