You forgot this on your list, Fritssaus, staple fridge occupant of every good Dutchman, and definately not Mayonaise.

On home made chips it is Ketchup but on shop bought it has to be curry sauce from our local chinese chippy. But I cannot understand this obsession with vinegar on them much as I like vinegar on and with other things but not chips.

Recipe, NOW.

Peanut butter (crunchy of course) melted down and mixed with coconut milk to whatever consistency you want. Curry powder, however hot you want it, and about half a teaspoon of sambal oelek (get them from the oriental place in the open market).

Not really a true satay sauce in the full sense, but very very similar to the stuff you get with chips in any FEBO in Holland

In my younger days sate sauce ,after several trips to Amsterdam the chip stalls used to serve them with sate , now has to be a good homemade tartre sauce not the jar shite

Many years ago there used to be a chippy at the rear of West Street (where Churchill Square is now) that offered 3 vinegars: Malt, Onion or Red Cabbage.
French chip vans usually offer Ketchup, Mayonnaise or Mustard.
