You could go to Avoca where Ballykissangel was filmed, there is a pub and a bookies there.....Naas races is not far.Anyone?
There isn't a huge amount of things to do in Carlow, you'll likely want to hop on the train to Dublin a few days at least. There is a not fantastic service to Baegnalstown but there is at least *a* service.
There's Old Leighlin - a cathedral town - not too far away: St Mullins

There's more to see in the adjoining counties really, Kildare has the National Stud, Wicklow has mountain walks and Glendalough and that sort of thing.
