Travel & hotel all sorted. Mid February, two couples, 3 nights. Looking for suggestions for water tours, walking tours, central restaurants, and any other tips. Thanks in advance.

It is on the edge of town (walkable) but try Höst restaurant. Absolutely amazing food in a non-pretentious environment. In between the courses you actually order they bring additional taster dishes. Order a 3-course meal, eat 7 of the most amazing and unexpected courses. Book now (online) though because it does fill up as is very popular.

As others say, it's great but expensive.

Another vote for Christiania. Fascinating place. Don't take photos though...

Get down to the harbour area, go to Nyhavn/Christianshavn etc, if you have the money go to Noma, voted the world's best restaurant a couple of years back.

Very good. My top two tips would be Tivoli Gardens and the aquarium, which is a good stop off on the way back to the airport.
