Fancy making a beef rendang - anyone got a recipe they know works well ?

Of course. Doesn't look too bad, although I have no lemongrass in the house. I am adding decent recipes to my repertoire all the time, added a nice Byriani this year, that I made a few times. Was quite pleased last week to make a meatball curry - possibly the most successful spicy dish I've done without a recipe at all. I have my default quick Sweet-and-sour curry that I make regularly.
