The course that sets up the entire meal and indeed the rest of Christmas Day, one you have to get right and the course where you get most licence to be creative over the traditional main course and puddings, but what will you be serving up this Christmas Day?

Want to do something with scallops. Saw a nice recipe this week, which will test this weekend. Ginger, Leek and Carrot very thinly sliced, blanched. Soy sauce mixed, into shell with sliced scallops inside. Shell on top, seal with a puff pastry trim, and place in oven. Butter sauce when serving! Looked delicious.

Good to see the traditional prawn cocktail with lashings of seafood sauce and hand cut iceberg lettuce is as popular as ever.
