Without the obvious comments, has anyone on here attempted to make their own cheese ?

I saw Halloumi being made on TV the other week and beyond finding a Cypriot sheep or goat to milk, it looked relatively straightforward.

There was an American girl who used to live in my log cabin in South America and she used to make a lime tinged soft feta, drained and kept in stockings. Easy to make and it was quite nice.

I've made Paneer. It's v v simple. Quite impressed the people I met in Hyderabad when worked there when they learnt of my skill

you take normal full cream milk, warm it in a pan and add lemon juice (about a tablespoon per litre).

This then causes the milk to separate and you drain the whey away and take the lumps (curd), place them in muslin, drain off the runny liquid by hanging above a bowl for 3 hours and then you place it on a plate with a heavy bowl on top for 4 hours to drain further. It is then ready to use.
