Does anybody know if I can ride a 125 bike on my car driving licence? Or where I can find the laws regarding bikes

You can, but have to do CBT first from memory. I know I had to do my CBT and show the certificate before I could buy my Vespa.

I would take the plunge and go straight or full bike licence!

Depends when you got your driving licence, I've had mine 5 years and still needed to do cbt to ride anything from 50-125cc. If you got your licence before 2001 then i think that entitles you to drive a 125 with L plates

I think before 2001 you only need a license. If your license is after Feb 2001 you need to do a CBT too, and can only drive on L plates IIRC.

You have to do a CBT to ride anything above 50cc, regardless of when you passed your car driving test, and have to ride with L plates until you pass a motorcycle test. The CBT exemption for car licenses only applies to mopeds, not motorcycles.
