If you avoid meat and fish you do need to make sure you source all the dietary content you have cut out. This can be a fun exercise for the middle classes with time and money to spare. The rest of us, who don't have the time or resources to research our groceries would be better off playing safe and eating a varied diet.

All of your other nutritional needs, protein, calcium, iron etc, can be readily found in plants.
Quite enjoyed making my tea tonight: roasted some carrots in olive oil, cumin, salt, pepper and lemon zest. Added to a baby spinach salad made with quinoa, spring onions, roasted pumpkins seeds, avocado and a simple dressing made from olive oil and red wine vinegar with orange. Took half an hour, most of that was waiting for the carrots, tasted great and served with some freshly made pasta. No meat and perfectly satisfying. This from a carnivore! Gotta cut down on meat for everyone’s sake though and now really trying to view as a treat. Mrs P suggested we go Veg all week and only have meat at the weekend. Why not? Save a fortune too.
if you eat quite a bit more of them. though we do eat far more meat than is necessary. an interesting thing i found was that not all nutrients are the same, one in particular is iron, the form found in meat is more easily absorbed than that found in veg. animals effectively preprocess basic plant matter into better quality food.

Whilst I had no qualms with the rest of your post, this section here paints being veggie or vegan as difficult, nutritionally and financial, and it simply isn’t. Vegetables are considerably cheaper than meat, the only real cost is when you buy veggie or vegan meat substitutes. Also, the only thing you can’t get from plants is vitamin B12, which can only be found in animal products. All of your other nutritional needs, protein, calcium, iron etc, can be readily found in plants.
