At the end of my tether
There is only cover that I rate..... that is Hendrix " All Along The Watchtower" . I wouldn't say it was better, just different and interesting.

As for Adele, " Make You Feel My Love"...... Yuk! ( maybe just not my kind of thing)
Mind you, they all make money for the guy. ...

Incidentally, I dislike his own covers of Sinatra songs that he has put out lately....horses for courses and all that.

If I knew this thread existed sooner...

Personally can't stand Adele, but give me the Garth Brooks version of 'To Make you Feel my Love' anyday.

I'm not as opposed to Adele in principle as you, but I do love me some Garth Brooks, and love his version of To Make You Feel My Love. I got a boxset of his stuff once that included a video from some performance in which he describes the process of making the song which I found hilarious. Here's some of it:

There's more to it than that, (including how Garth suspects he would have covered it if he didn't listen to Billy Joel's version first - that's how he says he found the lyrics).

As with John Cale's version of 'Hallelujah', most artists who cover 'All Along The Watchtower' are covering the re-interpretation, rather than the original. I can understand a lot of people sharing Buzzer's preference for covers because Dylan's voice is an acquired taste, but, other than singing them with a different voice, few people have done things that give a completely different life to his songs. The Byrds did it with 'Mr Tambourine Man' and Hendrix did it with 'All Along The Watchtower', but I can't think of any others.

Maybe you already know about this now...

There's a show that started in London last year and is now/soon to be running in Toronto called 'Girl from The North Country' that uses Dylan songs in a story of a guest house in depression era Duluth, Minnesota, Shirley Henderson won an Olivier award for lead female in a musical and Sheila Atim got one for support female in a musical. She also performed 'Tight Connection To My Heart' and got the biggest ovation of all the performers (and the show opened with the cast of Hamilton performing!)

To truly appreciate how great Sheila Atim's version is, you need to know the original (or just watch the first minute or so of this to get the idea):

and here is Sheila Atim's version:

This is a promotional appearance with Sam Reid and Claudia Jolley singing a fantastic version of 'I Want You' (audio isn't the best in this video)

Here's a trailer for the show:
