As for the thread, they're probably more solos than cameos but I'd have to say either Bobby Jean or Born To Run - both originally by the legendary Clarence Clemons.

Not really solos but I love Van Morrison's use of the sax to punctuate his music such as in Caravan off the Moondance album

This one brings back memories.. Once shared a house and one of the other blokes used this as a seduction song and he swore blind that once he was certain of getting it, the record would go on, he would be making his move and that by the time of the long sax solo near the end the knickers would be coming off. Quite a few times I'd be awoken at about 3am by the line 'You drink your coffee..' and you knew he'd pulled. If you didn't believe him then he'd get the polaroids out.

Not usually a lover of saxophone solos, but I like this from last year

There are some great Brighton Sax players, but I'll wait until I've sobered up.
