You're confusing a ship's wheel with a tiller.
You turn a ship's wheel the same as you would a car steering wheel.

That would only work if the ship was going astern and at that point they engines are still going forward. Its only just before they hit that they go astern.

And the iceberg is hit by the right hand side of the ship, the starboard, as she tries to pass to the left of the iceberg, going to port.

Just as well the helmsman didn't follow the First officer's order otherwise they'd have ploughed into the bloody thing head on!
