Where is the option for "shut up and gimme it"?

If someone is giving me a banoffee pie then they can use either pastry or biscuit, I will not throw it back in their face.

There is the mythical Disco version GOSBTS which many of us recall being played at Woodside Road but nobody has every been able to source.

It's 1 packet digestives & half a packet of milk choc digestives smashed to smithereens with a rolling pin & then added to melted butter. Before you start taking your stress out on the biscuits you put 2 cans of condensed milk to boil in a saucepan. That takes about 2 hours & careful watching of the saucepan so that the water doesn't go too low (and saying ffs when you realise you've forgotten to take the labels off the tins). Your BISCUIT base will be in the fridge to chill at some point. You'll then burn yourself & put caramel everywhere when you open the tins to spread on the BISCUIT base & then put a layer of banana on it. Then goes back into the fridge & you can put some cream & flake on it later, as all is good in the world after smashing the BISCUITS with a rolling pjn. :lolol:
A number of alterations needed to this method. First of all, bloody hell - how many are you making it for ? One pack of biscuits and one tin of condensed milk is more than enough for 10 - 12 portions !

There is a quick and easy cheat with the caramel ( and it works ). Empty the condensed milk into a small sauce pan and add some light muscovado sugar. Bring to the boil and then simmer until almost set. Spoon over the cooled biscuit base and put in the fridge.

Only add the banana at the same time as the whipped cream otherwise your banana goes brown in the fridge and NOBODY likes a brown banana !

Like the flake idea but drizzled melted dark chocolate or cocoa powder works equally well.

Well I'm shocked. Shocked I tell you. I too thought the biscuit base was the original and now I find out not only am I wrong, but the original creator looks on it the same way I would if the club replaced the brass band version of GOSBTS with a disco remix version.

I don't think I've ever had it with pastry - and I'm not going to start!

(As an aside I didn't know the original Hungry Monk restaurant had closed. Our younger American relatives had always wanted to visit it as their parents had been).
I have no strong objections to biscuit base myself. Whichever is your personal preference. I’d eat either….

Look, if we were sticking close to the original recipe from the Hungry Monk for heritage reasons then Banoffee pie should have instant coffee sprinkled on it. I mean Instant coffee, on a Banoffee pie....the dirty, dirty, bastards!

It's a 10 inch dish, no idea how many it serves I make it on request for parties, I'm not cutting it up as well! :lolol:

Putting it into a saucepan & adding sugar is just asking for trouble with my general standard of cooking! I boiled them for 1.5 hours once as I'd got the time wrong for a party, they were still too runny. Google told me I could use the microwave, that was scary. One second too long & you're going to have a microwave filled with toffee!

I push the banana into the caramel as I do thick slices. The caramel doesn't go over the top of them but the banana only gets a slight browning at the top. I have done the cocoa powder but prefer the flake or just grating some choc over it when I've forgotten to buy a flake! Melted chocolate sounds like a good idea though! (y)

I don't like banoffee pie because bananas are disgusting.

However, I made one for somebody else the other week (because I'm nice like that), and looked at various recipes off the internet to do it.

All had a buttery biscuit base (base base base).

I'm pretty sure @El Presidente will be able to tell you about a variety of pie that most definitely does not have a pastry crust.
