Smoked.
I recently discovered bacon doesn’t freeze very well. Was disappointed when I cooked some after defrosting and it was not right. Went instantly hard in the pan. Tough though, not crispy.

Another for streaky smoked, had some this morning.
I find that unless you spend quite a bit more, back bacon has a lot of water in it.

Thats because its cured in brine(salt water) rather than just salt. Buy dry cured.





If i can get it dry cured and smokey, prefer back than belly but first 2 are more important..

Saw this thread earlier, and went and got some dry cured smoked back, and some eggs.

Just had them for a very late brunch, with ice cold punk IPA.

Normal bacon is one thing I really miss about the UK. It's pretty much all streaky, fatty stuff here, which is fine to cut up and cook with but it's a poor substitute when it comes to a Full English.

Not supermarket bacon - even the expensive stuff is crap.

I currently get thick hand cured back bacon from a farmer in Steyning where the pigs are Gloucester Old Spots. Unfortunately they will be finishing soon as the land owner has kicked them out and the can't find anywhere else who will let them keep pigs locally.

If I can't get that then it is smoked middle bacon from Burtenshaws in Rustington (formerly Frewins). Not many places sell middle cut and this place is where my grandad always used to get us bacon as a treat when I was young.
