I suspect it is because Latin is a proper noun so isn't included. Otherwise you could have Paris or Capri or Barry or Suzie and such like as possible answers. Of course Gully is allowed!
How about referring to a Latin, as in a South American though?

I suspect that even as an adjective, it is usually capitalised. I haven't played for years, but I am sure Scrabble does not allow proper nouns or words that are capitalised so probably has just followed that list as a base . I know they took out some contentious words, but can't believe Latin was one.

On another note, at least you didn't waste a go on a wrong answer
