"Often"? At the risk of starting another debate it's not a pie if it hasn't got a top. Should be called Banoffi Tart.

And it's NOT a pie if it's served in china dish with just a pastry crust on top.

Anyway, as you say, that's another debate.

I often make pies at home where there's only a pastry top
