kebabs made of alternate king prawns and lime wedges,

also trout stuffed with lemon & almonds - you can get a special fish grilling thingy that 'sandwiches' the fish between two grills with handles - easy for turning.

An excellent tip I picked up while on holiday in Northern Cyprus.

When you marinate you chicken, lamb or pork put all the ingredients in a bowl, then, once you have finished the olive oil/chilli/ red wine etc. cover the whole lot in skimmed milk.

Leave it for at least 30mins.

This makes sure that when you cook the meat it doesn't dry out, and the milk leaves no flavour so your marinade works a treat.

Try it, I assure you, you will be pleased with the result, and you'll do it always.

Also, if you're cooking haloumi cheese, my tip is to put it in one of those fold up grill things, and put it on the bbq, and turn it every 20 seconds, the best haloumi you'll ever have.

i was about 10, left alone in the house for the first time, and decided to see what god awful contraption i could mix together for lunch. turned out to be bloody nice though
