Can anyone advise....

Assuming that the deal is one ticket per STH when the tickets come out, If I buy one against my season ticket and one against my daughters junior ST, can I buy an adult ticket instead of a junior ticket, I.e 2 adult tickets.

Yes just change from child to adult when selecting

Can confirm that it worked similarly for me when buying Palace tickets. I think that the choice actually defaults to an Adult ticket.
