How do they take the grass up and leave the lines there?

They're not literally taking the grass up and dumping it elsewhere! They appear to be be churning/turning up the soil (folding it over if you will) so the white paint will remain, effectively "upside down" a few inches from where it was.

If they repeat, gradually the lines will fade I guess.
