In a pile of football shirts
make a simple marinade of lime or lemon juice, chilli flakes and a little olive oil, and put the chicken in that, best to cut it into chunks or slices.

Fry a chopped onion, and add some sliced chillis and a few herbs. Chuck in a can of chopped tomatoes, and some ground corriander and ground cumin. Cook this on for a few minutes.

Then, get yer griddle pan out, get it REALLY hot over a high heat, and then cook the chicken strips, try to only turn them once to get a really good chargrill effect.

When the chicken is cooked, chuck it in the tomatoes, mix it up and serve on rice.

Spanish style chicken. have you got paprika?
Do the onions, garlic & chicken perhaps any other veg you want to use up, add some chicken stock (use a cube & hot water for ease) paprika (1 level teaspoon ) & throw you tin of tomatoes in & leave for 30 mins & hey presto. Delicious. Serve with rice or pasta / crusty bread. Oh coriander too if you have it add toward the end or garnish.
