Ham

I have just made my own ham, curing it and everything. I followed a recipe and it turned out well but uninspiring. I would like suggestions on additions to the cure that will give it that special and distinctive taste.

This advice may be just a little to late for you, but you should feed the pigs on acorns

HFW does air cured hams as well doesn't he by hanging a ham in a wooden box with mesh sides from a tree.

Although I've heard they don't appreciate being massaged in bacon fat - a bit close to the bone...

Plus I've heard there are places in Amsterdam where a pig will let you massage her for a small fee.
