This exact topic was discussed on Radio2 back in the summer. I think it's something to do with crisps being made mon-fri and having a general BB date. it's the same meaning as "week ending" or something like that

Just checked the Cypriot crisps I ate earlier today (Goldies X-Trene Prawn cocktail - nice!). They expire on a Thursday.

I can confirm both the quavers and wotsits multipacks in the cupboard under the stairs have bb dates that are Saturdays (19/3 and 9/4 respectively)

Someone told me the reason just recently, its so supermarkets only have to do stock checks once a week, so often the crisps are being thrown away and would be perfectly edible for another 6 days
