Use exposure compensation and overexpose by 1 to 1 and 1/3 stops, and you'll be fine; the snow will turn from grey to white.

Yes, though I didn't think the helicopter operator would be a pro photographer! They could have exposed for the grass as well, which would have got the exposure approximately correct.
