My understanding is that Shrove Tuesday is the big feast before Ash Wednesday which is the start of Lent. 40 days before Easter.
We all binge on pancakes but often ignore Lent.

The Christian version is Candlemas or Chandeleur, when pancakes are also eaten because they look like the sun, and symbols the return of light.
It is nothing to do with Shrove Tuesday or Ash Wednesday which is movable. Lent is a time of preparation when people often fasted so used up their fat, flour and eggs. Mardi Gras - Fat Tuesday.
Nowadays, it’s just giving something up rather than fasting.
