Just had an update and bits of the phone has changed, and i dont like it, is there anyway to go back to the old way it was? And i dont want to hear buy an iphone etc

Don't think there is. Maybe you should buy an I phone in stead

You could root the phone which will allow you to install custom software or revert back to the previous version. You have to know what you are doing and perhaps be a little techy as if you make a mistake, you can brick the device. Xda forums is a good place to look, as you've got a Samsung it is likely that there will be a lot of developer support.

As to the iPhone suggestion, they have had updates which have proved unpopular as well.
