What's the best way of preserving my chilli stock?
I have plenty of Hallapeno,loads of habanero,a stash of Hungarian Hot Wax,some rather small and green Scotch Bonnet and a few Dorset Naga.
Half of last years stock is still in jars tasting too much of Sarsons pickling vinegar.
So chilli kings of NSC, what is the best-non vinegary-way of preserving this years crop?

Place them on a tray or large plate and freeze them.

When they are frozen, place them in bags and freeze as normal.

The first stage stops them from sticking together.

You can then use them straight from the freezer for cooking, no need to defrost.

Never done it, but you can also smoke them on a barbeque. Seems a lot of hassle to me.

Don't need to put them in the oven, just spread them out on a tray in the kitchen. Then stick them in a food processor and hey-presto chilli flakes.

Air drying works fine. You don't even need to use the oven. I dry mine by hanging them across a south facing window
