I found a recipe for Moroccan home made dinner rolls which called for fresh thyme. Mine was out of date, but I used it anyway and it worked out well.

I liked that old thyme Moroccan roll.

Like all fresh herbs, thyme doesn’t keep for that long.
You can expect it to retain quality between 7 and 14 days in the fridge, depending on how you store it.

I'm sure the taste would have been significantly improved with fresher produce.
