Don't beat yourself HG - I drove myself nutty with that one yesterday.. I had decide it had to be Cockburn (Google told me it was apparently a city in Australia!), and couldn't see the "slightly more well-known, and probably larger" conurbation that proved to be the correct answer... sorry I couldn't pass on my experience in time and return the favour you did me!

1) Think of a condiment that goes with pies (and ham and beef) where a variety of it has a city in the name

2) for the spring literally say what you see, including the colour

3) Who came up with that theory
