How do you get your poached eggs to stay together?? Everytime I do mine I have loads off egg white left in the pan as it astarts to split when I put the raw egg in the boiling water.

Right. Firstly make sure the water is SLOWLY boiling. Really not bubbling all that much.

Then make a whirlpool by stirring the water but SLOWLY. Doing it too quick will disintergrate the egg (i used to believe the quick the whirlpool the better but it fails).

Drop the egg into the middle of the whirlpool and it will form nicely. Make sure it still is not over-boiling.

In no time you will have a perfect egg.

Boil the water until it's bubbling but not going mental, swirl the water round and drop the eggs as slowly as possible into the middle, some use vinegar to hold the eggs together, i have never had too though. Hard thing to get right, timing is everything

The single most important factor in a successful poaching experience is FRESHNESS! (of the egg, not your bodily parts - although that would probably improve the experience too.)
