Home made pasta

Am considered buying a pasta machine and making pasta at home but how does it compare with shop bought which is very cheap.

I had home made fresh pasta at a fancy italian restaurant, but couldn't really tell the difference. Jamie Oliver always says you can't go wrong with dry and fresh is just an expensive waste of money that does the same job as dry. I must say i'm inclined to agree.

It's worth it if you want to make lasagne, as rolling out a sheet of pasta can be fiddly. Or if you want to make your own tortellini / ravioli.

But I haven't used my pasta machine in years as dried pasta these days is so good.

Haven't made any for a while but used to make it quite a lot.

Shouldn't really compare it to dried pasta because they are very different things. You'd never bother to make spaghetti for instance.

I probably prefer dried pasta to be honest... and I think you get better results from fresh pasta if you let it dry out a bit !

The rolling out is a hassle - as is the mixing. Bread machines do a very good job by the way. Need to buy the right '00' flour for it to be worth it.

Since pasta is only flour water and sometimes egg... it's difficult to find a really good reason to make your own unless you are really into cooking.

The exception is stuffed pasta, like ravioli. Homemade that will ALWAYS be miles better than anything you buy in a supermarket.

Get yourself on the pasta course at Jamies shop in Western road, they teach you to make it properly and easily and it is much better than dried.

That said it is a fiddle and life's too short, special occasions maybe..
