From zero to something close to a quarter of a million pies in its first year is damned good going, I'd say.

You would consider any client that represents more than 25% of your turnover a risk because if they go bust or you lose the contract you can be left exposed depending on whether you have had to get funding/borrowings to accommodate the growth in turnover.
