A dhansak, in my opinion, is always a good barometer for curry houses due to the sweetness and spice balance as you say. So many places fail to get this right. I agree they make a great dhansak.
Just starting to venture into the Brighton Indian restaurants. Done Sri India, Ashoka and Elizabethan tandoori and now The ganges. This was by far the best dhansak ever, just a shame it didn't look terribly appertising.
Spice Merchants in Lewes comes highly recommended too if you're ever that way.
