out of them it would be cheddar, but i love edam. that grated parmasan they do at pizza hut is also bloody naste

Been up here 3 years now, but it was only six months ago I was introduced to "Shropshire Blue" (no, not a porn star).

Smooth texture (just about sliceable with a sharp knife), the colour of red-leicester, but with the speckly blue bits in. Doesn't smell strong, but has a very pleasant flavour.

Marvelous stuff .....

a nice strong crumbly cheddar for me. Dolcelatte(?) crumbled into pasta. Fresh Parmesan is always in my fridge. Brie with bacon, hell, cheese is a super food!
