Took chicken breasts x2 out of freezer this morning, could probably make up a passable curry for myself and housemate this eve but I'm feeling more inventive than that.

Most ingredients will already be in the cupboard or can be acquired on the way home from work - so what can NSC's finest culinary minds inspire me to produce?

Chicken fajitas - my take on it.

Fry some chopped onions, red peppers, garlic and chillies in oil until soft. Toss in a couple of tin of tomatoes and some tomato puree. Simmer on low-medium heat for 20 minutes until reduced a bit.

Chop the chicken breasts in to strips about an inch wide and in a separate pan to the tomatoes, fry with some chillies, paprika and black pepper.

Warm a couple of tortilla wraps (20 seconds in the microwave), and spread the tomato sauce even with some sour cream. Place the cooked chicken inside, and hey presto chicken fajitas.

Assuming you have some oil in-house, cost of extra ingredients - no more than £3.00

I'd go for Jambalaya

Cook off the chicken (diced) in olive oil, add chopped chorizo, celery, garlic, onions and soften on a low heat. Add chicken stock and about 80-100g rice per person, season and add cayenne pepper, bay leaf and paprika, bring to boil put lid and leave on low heat for ten minutes, then turn off heat and leave with lid on for 10 mins

blend some basil,parmesan and olive oil together to make a pesto sauce,score the chicken 2-3 times both sides and then rub pesto over chicken and work into scores, wrap chicken in parma ham and put in a dish, add 3/4 glass of white wine and whole clove of garlic and 1/2 teaspoon of lemon juice and bake in oven for 45mins at 200c,

about 5 mins before the chicken is done heat up the hob put the chicken onto a warm plateand drain the liquid and garlic into a pan,add a good knob of butterand the rest of the wine.Bring to the boil and reduce by half.Now simmer and add carton of single cream keep stirring as it might separate. add 1 good teaspoon of dijon mustard. Add sun dried tomatoes and cook for a further 5 mins.

serve with your choice of pasta, personally i serve it on a bed of tesco's egg paglia e fieno

Tenderise them. Cover them in flour and ground pepper. Then dip them in eggs. Then cover them in breadcrumbs. Shallow fry for 5-10 mins, turning once. SCHNITZELtastic.

Get some Golden Curry cubes, Sushi Ginger and some Panko breadcrumbs

- Butterfly the chicken, cover in soy sauce and worcester sauce
- Bash the chicken til flat all over
- Cover the chicken in a dusting of flour all round
- Dip chicken in beaten egg
- cover chicken in Panko bread crumbs.
- melt golden curry cubes in boiling water
- shallow fry chicken in hot oil til golden brown and crispy.
- cut shicken into strips
- serve with rice, sushi ginger, pour over golden curry sauce (add option rocket and cucumber salad)

Thank you all for your suggestions - I think TLO has won for tonight with fajitas just as I already have almost all the ingredients, but all of these are likely to be tried at some point!

chicken burger? Mix in a blender with herbs and/or spices of your choice, other flavourings of your choice garlic, peppers, onions, etc.

or for a couple of examples:

Obviously replace the turkey with chicken.

Ingredients
2 eggs, beaten
2 cloves garlic,
minced 4 ounces feta cheese 1
(10 ounce) box frozen chopped spinach, thawed and squeezed dry
2 pounds ground turkey

Directions
Preheat an outdoor grill for medium-high heat and lightly oil grate.
While the grill is preheating, mix together eggs, garlic, feta cheese, spinach, and turkey in a large bowl until well combined; form into 8 patties.
Cook on preheated grill until no longer pink in the center, 15 to 20 minutes.


Ingredients
1 pound ground turkey
1/2 cup finely chopped onion
2 tablespoons chopped fresh cilantro
1 chipotle chile in adobo sauce, finely chopped
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon seasoned salt
1/4 teaspoon black pepper
4 slices mozzarella cheese
4 hamburger buns, split and toasted

Directions
Preheat an outdoor grill for medium-high heat, and lightly oil grate. Place the ground turkey, onion, cilantro, chipotle chile pepper, garlic powder, onion powder, seasoned salt, and black pepper in a mixing bowl; mix well. Form into 4 patties.
Cook the hamburgers on the preheated grill until the turkey is no longer pink in the center, about 4 minutes per side. Place the mozzarella slices on the patties 2 minutes before they are ready

Chicken breast, stuffed with cream cheese wrapped in bacon, served with green beans and potato dauphinoise. Ridiculously easy to make, and amazingly DELISH.

Get yourself some waxy potatoes, couple of garlic cloves, proper mozzarella and a jar of roasted red pepper pesto.

Peel the potateos and cut to 1cm slices, boil for 5min and drain then crush the garlic. Heat 1tbsp of olive oil in a ftying pan and fry potato slices with garlic until golden. Remove and keep warm.

Pre heat grill. Slice chicken into strips and stir fry until golden, stir in pesto to heat through. Remove half mixture from pan and lyer half the potatoes, add rest of chicken back on top and place rest of potatoes on top of that. Slice the cheese and place on top and grill for 5min until cheese has melted. Serve at once.
