A simple but glorious starter...

For each person you need a ramekin, a small individual version of the straight-sided souffle dish.

In the bottom of each ramekin, place a piece of undyed smoked haddock, raw. Cover with single cream, and grate over it a generous amount of cooking cheese, such as cheddar.

Season with a little freshly milled black pepper (the fish is probably salty enough). Top it off with a some grated parmesan for extra 'bite', and bake in a hot oven for about 20 minutes.

Serve it in the ramekin & piping hot, with toasted brown bread and butter.

We're having - king prawns on skewers with a sweet chili sauce, a soup (undecided), a souffle and duck things with watercress, pate and toast for the kids.

My moronic family invited themselves for dinner and Paddy has no spine to say no to his family and so we have 27 adults and more kids than I can be bothered to count and of course none of the leeches eat the same damn thing hence the short order menu which will just about work out at one recipe per person by the time Christmas rolls around and they have finished dictating to me.

27 adults? Countless children?

You want five loaves and two fishes, mate

I'll leave that for Paddy, I'll be happy with a plane ticket.
