I like it bleeding, It has to have a cooked outer layer then be as red as anything in the middle and blood oozing out. preferably topped off with a peppercorn sauce.

Has to be rare. Overcooked beef is horrible. It goes all tasteless and chewy.

classic moment (one of those 'you had to be there') at my old job, in the office 3 of us talking about meat and how it should be cooked and my mates says out loud..RIGHT at the time the whole room falls silent: "I like a big piece of MEAT!" - entire room burst into laughter, I wet myself on the spot and had to be carried kicking & screaming out the room as I could'nt control my laughter...marvelous moment!

Well Done for me too!
 






You can't beat top quality beef that has been allowed to stand for a few minutes in a slightly warm kitchen.

Unfortunately, much of the stuff that gets served up needs hours of braising to soften up properly. And the stringy bits won't be broken down by any sort of treatment - apart from the chemical processing that Ronald McDonald specialises in.

I went to Leonardos saturday night and had the fillet steak there £15.95. Probably the nicest steak Iv ever had, coupled with a nice dark sauce which for the life of me I cant remember what it was called. It was at the top of the menu if anyone knows the menu inside out!

i think steak is very over-rated,unless you have some sort of source with it, i.e peppercorn

give me a nice gammon steak with a fried egg on top anyday!!
