nope, completely ethical (if you eat meat). it's a pork (normally) pate made by coocking the meat very slowly at a low temperature so that the meat literally falls apart. absolutely delicious stuff!

i absolutely adore rillettes, it's a confit type pate produced most often from pork, sometimes poultry, and is a speciality of le mans. sadly i've never seen it in england, god knows why!
