I have just got back from the market and have opened some fresh oysters, how do I "cleanly" separate the muscle from the Oyster and what is the best way to prepare them?

Thing is, there is a like brown muscular like tissue on the top of the Oyster. Does anyone know if you separate this?

Cut the muscle on the top of the shell to release it and use a SHARP knife.
Lemon, black pepper and/or tabasco
make sure you wash any bits of broken shell out!
Don't eat them if you are pregnant....
